Duelos y quebrantos

Ingredients (6 persons):

  • 4 red pork sausages.
  • 200 g of bacon.
  • 200 g of cured ham.
  • 3 cloves of garlic.
  • 100 g of lamb brain.
  • 1 glass of olive oil.
  • 15 eggs.

Preparation:

  • Mince the red sausages, the bacon, the cured ham and the garlic. Add a pinch of salt to the bacon.
  • Heat the oil in a pan and fry the bacon, the sausage, the ham and the garlic, giving it a stir now and again.
  • Add the lamb brain and the eggs mixing it according to our preference.
  • Serve immediately.

Comments:

  • It is important to set the eggs and the lamb brain just before serving on the table.
  • It is also possible to prepare this dish with no lamb brain.
