Duelos y quebrantos
[pronounced: doo-ey-los ee ke-bran-tos]
Ingredients (6 persons):
- 4 red pork sausages.
- 200 g of bacon.
- 200 g of cured ham.
- 3 cloves of garlic.
- 100 g of lamb brain.
- 1 glass of olive oil.
- 15 eggs.
Preparation:
- Mince the red sausages, the bacon, the cured ham and the garlic.
Add a pinch of salt to the bacon.
- Heat the oil in a pan and fry the bacon, the sausage, the ham and the garlic,
giving it a stir now and again.
- Add the lamb brain and the eggs mixing it according to our preference.
- Serve immediately.
Comments:
- It is important to set the eggs and the lamb brain just before serving on the table.
- It is also possible to prepare this dish with no lamb brain.
